It was nice to find that Rachel had made it to her destination. We traveled up to Bountiful so that Jeffrey could meet with his brother Mike and do some legal work on the Trust his mom had left. It is wonderful and a little compelling to visit with Mike and Carol as their lives have changed so much in three years. I am never sure how they are going to be and what new changes have happened in their lives.
It was good to visit for a bit. And then we headed down to Provo. When we hauled our suitcases upstairs, it was evident that Janice had been hard at work and made many preparations for everyone to come.
Beds and mattresses were set up in the playroom upstairs |
Every spare bed was made up and had a bottle of water next to it - also a jar of mints. |
In the bathroom, Janice had toiletries and spare of whatever could have been forgotten. She and her daughter in law made meals in advance and a really cool breakfast burrito that could be microwaved for 2 minutes and eaten.
Watching was a treat and got me thinking about having lots of people over for an event. I just had to get the recipe because that sure looks like a winner with a big crowd. Well not one for the Sacramento Adams (waffles, eggless and dairy less muffins), but for the rest.....
Sausage Breakfast Burritos
3 tablespoons butter
12 eggs
3 heaping tablespoons sour cream
1 ½ tablespoons water
Salt and pepper to taste
1 lb. pork sausage, cooked and drained
½ cup chunky salsa
2 cups Pepper Jack cheese, shredded
10-12 lg. flour tortillas
In a large skillet, melt butter. Beat eggs, sour cream, water, salt, and pepper in a large bowl. Cook eggs in butter over low heat.
In a large bowl, gently combine cooked eggs, cheese, salsa, and sausage.
Place a large spoon full or two of mixture onto a tortilla to make burritos, folding in the ends and rolling up.
Wrap each burrito in a paper towel and store in a freezer bag in the freezer.
Microwave frozen paper towel wrapped burrito for about two minutes.
