Every Saturday evening the Relief Society sisters in the North Ridge Ward meet to discuss, show, or teach each other something. Last Saturday we learned from Sister Adrianna how to make Plantain Bread. I was given some of this bread a few weeks ago, so I knew how it would turn out!
Here are the ingredients - No portion sizes, just some of this and some of that!

Plantain Bread
Very ripe plantains - peeled and cut up and ultimately blended
Ginger pieces - well washed then blended
Seasonings whole form then blended in blender to powder:
White peppercorns
Black peppercorns
Dried red peppers
Whole cloves
Flour
Baking Powder
Pinch or so of Salt
Red palm oil
While the plantains are being peeled and cut up, the seasonings are blended in the blender until powder forms. Set aside and use blender to blend up the ginger. Add cut up plantains and blend, dump in a bowl and blend up the rest of the plantains adding the Seasonings to the last batch. When all batches have been added together mix well. Add a little flour to pull it all together and a pinch of salt. If you want it more cake like add Baking Powder, this is optional. Add a pinch of salt and mix well. Red palm oil is smoothed on top and mixed in a little bit. Pour out onto greased baking sheet or put in small batches in two plantain leaves folded up and put on baking sheet. Preheat the oven hot, then set to lower heat. Bake on a low setting for 30 or 40 minutes. Use a toothpick to determine when batter is set.

The oven in the meeting house does not work, so the plantain bread was brought to Sister Tagoue's place to bake. I had to go home, so Sister Grace was nice to send me pictures of the final pieces of plantain bread. This is a very spicy hot bread without sugar. I like it, though I eat it in small pieces.
