I have had Jollof Rice since I've come to Africa because every restaurant menu has it on. It was served at our Christmas dinner in single serving with chicken. Juliet's Jollof Rice is superb! She flavored it with beef, smoked salmon, and chicken along with the usual tomato paste, onions, garlic, peppers (green, little, hot), and of course maggi cube. I saw her add other spices (one I'm pretty sure was curry) but I don't know what they all were.

I really thought this was excellent and it disappeared in one sitting. Brother Dumevi was very excited when he came to see what was cooking today. He brought three meals home with him to deliver and Juliet took hers home with the extra ingredients. Brother Dumevi bought fruit for everyone.

After melting a carry-out container, we loaded the better plastic containers with Jollof Rice, and fried plantains. the plantains tone down the rice when eaten together. Some people like it better. |

Jollof Rice is wonderful and I highly recommend it!
