Healthy Granola

 For my Utah friends who wanted this recipe:

Healthy Granola


5 generous cups of rolled oats
1 cup of pumpkin seeds
1 cup of sunflower seeds
1 cup of chia seeds
1 cup of flax meal
as much hemp seed as you want to afford
1 cup of water
1 cup of vegetable oil
1 cup of honey

Mix all together, spread on a baking sheet and put in a 300° oven for 30 minutes, pull out and turn it all over, put back in for another 27 to 30 minutes. Cool. Break up and store in a sealed container on the counter for a week or two. 

Tips and options:

1. Using two bowls, add all the tiny seeds to water, oil and honey and then mix with oats and big seeds - so there will be less static clinging of tiny seeds in the bowl.
2. Add  your favorite nuts and dried fruit - I love craisins, dried blueberries, and cherries.
3. My daughter in law wants her granola with 2 cups of water, sans oil, and 1 cup of maple syrup, sans honey. Her kids love it. 
4. We enjoy this with fresh fruit and plain Greek yogurt - yum!
5. I have experimented with brown sugar, maple syrup, and agave. It is all good. We found the honey digests in our systems nicely. This was interesting with African honey and had a different flavor. 
6. Different ovens run hotter or cooler, 275° to 310° Watch for light browning.
