Was it Laura, Facebook, or somewhere else that I learned this cool trick in peeling the potatoes for mashing up?
Cook potatoes as you normally would, cut in half, line up squared cooling rack over a bowl then press down potato half on the cooling rack, and presto your potatoes are half mashed up to start! Season to taste while whipping them smooth. Enjoy and eat.
I scrape a knife over the bottom to loosen any potatoes left over. It is amazing how quickly you can peel all these potatoes for a big bowl of mashed potatoes.
